Multipass Club announces cooperation with a new restaurant with the old name—Kolkhi, which features a surprisingly harmonious combination of progressive technology and legendary Caucasian traditions. Plasma screens are unobtrusively incorporated into archaic stone and textiles, metal and colored glass. The wheels of the araba cart here have been converted into candelabras, and the age-old boards of the ceiling, as thick as logs, are completed in halogen lighting. But traditions are nevertheless more important, first and foremost in the cuisine. The most popular Caucasian dishes at Kolkhi are prepared according to old recipes that have been restored by the chef. The restaurant uses real fire for this, as evidenced by the chargrill set right at the entrance. This is why the shashlyki (shish kabobs) and khachapuri (round flatbreads with cheese) here acquire a refreshing refinedness and subtlety of taste. Of course, the quality of the ingredients is a top concern—everything is as fresh as can be, and all dishes are prepared in freshly-cut form. The “fitness menu” is available for weight-conscious guests and those who follow the latest health trends in today’s cooking. It includes dishes that are prepared using steam, without oils and carbohydrates. The wine is also direct from Georgia, from private vineyards. In short, Kolkhi offers a real taste of the Caucasus region.
